  • Strutto (Sugna): 150-200 g (elemento fondamentale per la friabilità)
  • Mandorle intere: 150 g (con la buccia, da inserire nell'impasto) + 50 g per la decorazione
  • Acqua tiepida: 125-200 ml
  • Pepe nero: abbondante (2-3 cucchiaini o circa 5-8 g, macinato fresco)
  • Lievito di birra: 8-20 g fresco (oppure 3-5 g se disidratato)
  • Sale: 8-10 g
  • Lievito madre
