Chain Mini, superior quality
The word"Mini" in Minicaseificio stands for small and refers to the short, tightly controlled supply chain from which our products are sourced and which guarantees the quality and safety of a genuinely artisanal dimension.
We follow from start to finish all stages of the production of our cheeses, from the cultivation of the fodder to the raising of the buffaloes and the processing of the milk according to traditional processing methods that only an artisanal dimension can give.
Our dairy is Mini because we are a family before we are a business.
Our story begins in 1990
1990
In 1990 a frost destroyed the Costanzo family's entire kiwi crop. Gennaro, the progenitor and father of five children, decided, together with his wife Lia, to start a new business and, in 1991, "Mini Caseificio Costanzo" was born.
1991
The small laboratory was born in Lusciano, in the province of Caserta, in the fertile Campania Felix, where small quantities of milk from stables personally selected by Gennaro give birth to an excellent final product: the Costanzo Mozzarella.
Success was immediate. Since then, Mini Caseificio Costanzo has always adhered to the initial idea: pursuit of quality, which starts from the milk, from the relationship with the farmers, with the operators inside the dairy; which means control and respect for an ethic.
1995
In 1995 the livestock farm was established with the first buffalo heads.
2000
For more than two decades, Luigi, Alessandro, Valentina and Davide have been carrying on what Gennaro and Lia created from scratch by distributing the Costanzo family's products exclusively in the company's five stores.
Louis-Marie
Head of the agricultural livestock sector. His passion for the land and open spaces makes him a free spirit.
Alexander
Dairyman and responsible for the entire production division. He is the keeper of the secrets of the dairy art and family traditions.
Valentina
Responsible for sales, personnel and communication, he is the rational soul of the company, but also the "smile" for all our employees.
David
Always very committed to his work as an architect, he never lets his contribution to the company's growth go unnoticed: devoting himself to special projects and the care of the stores.
